Neapolitan Beer Brownie Sundae
Just because Summer came to an end, doesn’t mean we’re putting down the ice cream scooper. On the contrary! When we got wind of Stone Brewing Company’s new ice cream flavored imperial stout beer we got right to work concocting a sundae to showcase its brilliant flavors.

You see, every year San Diego’s Stone Brewing Company and the American Homebrewers Association host a homebrew competition, which produces some amazing beers. This year Paul Bischeri & Patrick Martinez/ Abnormal Beer Company/ Stone Neapolitan Dynamite took the cake! It’s a throwback to those childhood striped ice cream boxes of vanilla, strawberry, and chocolate. Rather than pick one flavor (and lets be honest, who really just picked one?) this stout magically highlights all three flavors. They even threw in a grown-up addition of coffee.

Neapolitan Dynamite pours black with a chocolate brown head and smells like freshly brewed coffee with a hint of chocolate and strawberries. The rich flavors of chocolate and fresh strawberries inspired this decadent dessert. We decided to go with a childhood classic also: a sundae. We baked up one of our tastiest beer brownies yet and piled on fresh strawberries and oodles of melted dark chocolate. And of course, we couldn’t forget the ice cream to top it off. One bite of this sundae and you’ll realize this is not your typical childhood dessert. A rich brownie, a pop of fresh strawberry, creamy cold ice cream, and a crunch of dark chocolate drizzle make for a crazy addictive adult version… not to mention those warming sips of beer in between bites! You’ll definitely want to share this recipe with your friends and family this holiday.
Pair with More Beer
Though we added beer to our brownie, you’ll definitely want to grab a beer to enjoy alongside it too. Since the Neapolitan Dynamite is available in 22oz. bombers, we’d suggest pouring yourself a glass of the leftovers. Finished it while baking? No problem. Stone Brewing’s seasonal Xocoveza Imperial Stout makes for an excellent pairing as well. Also an Imperial Stout, this beer has notes cocoa, cinnamon, coffee, nutmeg and vanilla. It’s one of our favorite holiday beers, so we’re usually pretty well stocked.

- ½ cup melted unsalted butter
- 1¼ cup sugar
- ¾ cup unsweetened cocoa powder
- 1 tsp instant coffee
- ½ tsp salt
- 2 large eggs
- ½ cup Stone Neapolitan Dynamite beer or other Stout
- ¾ cup all-purpose flour
- 1½ cups fresh strawberries chopped
- ¾ cup dark chocolate melted

- Preheat oven to 325.
- Add melted butter, sugar, cocoa power, instant coffee and salt to bowl. Stir to combine.
- Add the eggs and beer, stir until well combined.
- Sprinkle with flour, stir until just combined.
- Pour into an 8x8 baking dish that has been greased.
- Bake at 325 for 30-32 minutes or until the top is slightly firm to the touch. Allow to cool completely.
- Add strawberries in an even layer. Drizzle with melted chocolate and allow to cool before topping with a scoop of your favorite vanilla ice cream. Cocoa nibs for garnish are optional. Serve with your favorite stout.
