Caramel Apple Pork Chops with Brown Ale
Pork chops and apples is a winning combination! This popular dish has fall written all over it; it’s warm, has all those familiar fall spices, and pairs well with roasted squash or pumpkin pie. Plus, everything tastes better with a little beer in the mix, so we added one of our go-to fall beers, Rogue Brewing Company’s Hazelnut Brown Nectar. We can’t even describe how much we love this beer! A little sweet and nutty, this is the perfect pairing for these delicious pork chops because it adds a subtle sweetness and depth to the dish. Of course you can always add your favorite brown ale, or grab one of the many spiced winter ales that are about to flood the shelves come November!

- 1 tbsp vegetable oil such as canola or olive oil
- 4 1 inch thick pork chops
- salt and pepper to taste
- 2-3 tart apples, sliced such as Fuji or Granny Smith
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tbsp butter
- 2 tbsp all-purpose flour
- 4 tbsp your favorite brown ale We used Rogue Hazelnut Brown Ale because it's nutty, spicy and sweet
- 1/4 cup hazelnuts or pecans (optional)

- Add oil to skillet or dutch oven over medium-high heat. Lightly season pork chops with salt and pepper and brown on both sides. Remove from pan.
- Combine brown sugar, cinnamon, nutmeg and a pinch of salt and pepper. Add butter to the skillet, stir in brown sugar mixture and apples. Sprinkle flour and incorporate into pan drippings. Cook, stirring occasionally. Deglaze the pan with beer.
- Add the pork chops back to the skillet. Cover and cook over medium-low heat for 1 hour. The beer and apples will have created a delicious sauce and the meat will be very tender.
- Optional: Add hazelnuts or pecans to small pan over medium heat. Stir occasionally until they begin to toast. Keep a close eye, they will burn! Remove from heat and allow to cool. Coarsely chop and sprinkle over pork chops and apples to serve.
