Craving something warm and sweet, I decided to look up some recipes and knew I wanted to incorporate the bottle of New English Brewing Co.’s Brewers Special Brown Ale that was in my fridge. After a little research, I found the perfect recipe for Brown Sugar Beer Cookies! These cookies use a minimal amount of ingredients that are typically found in any baker’s cabinets and are very easy to make. Honestly, who can resist fresh baked goods? Especially sugar cookies made with beer!? I know I can’t!
New English Brewing Co.’s Brewers Special Brown Ale is perfect for this recipe as it’s lightly sweet and has a creamy maltiness adding to the already awesome flavor of these cookies. Once the cookies finished baking it was time to indulge. I grabbed a warm cookie, a glass of Brewers Special Brown Ale, and a warm blanket. Wrapped up and feeling cozy, I definitely enjoyed!

- 3/4 cup unsalted butter, softened
- 1 1/4 cup brown sugar
- 1 large egg yolk
- 1/3 cup Brown Ale (we used New English Brewing Co. Brewers Special Brown Ale)
- 1/2 teaspoon vanilla
- 1 1/4 cup all-purpose flour
- 1 cup bread flour (adds fluffiness to the cookies)
- 1 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
- 1/4 teaspoon cinnamon (we say an tad extra doesn't hurt!)

- Preheat oven to 325 degrees.
- Put all wet ingredients, vanilla, unsalted butter, brown sugar, egg yolk, and brown ale, into a stand mixer (if you don't have one you can mix by hand, but do it well; don't be surprised if beer doesn't mix completely).
- Then add dry ingredients, one by one, all-purpose flour, bread flour, baking soda, baking powder, salt, cornstarch, and cinnamon. Keep stirring on low or consistently by hand as each ingredient goes in.
- Prepare baking sheets by spraying with non-stick cooking spray, covering with parchment paper or using anti-stick cooking pad.
- Scoop out dough using a spoon. You can make them any size, but a tablespoon size makes for a good cooking size so that they won’t take too long or over cook. Keep an eye on them and time as necessary.
