Beer Infused Chicken Chile Verde Tacos In A Slow Cooker
This is one of our favorite recipes! It is, by far, one of the easiest recipes to make, and the result is absolutely delicious! All you need is a few ingredients and a slow cooker or crock pot to make these delicious Beer Infused Chicken Chile Verde Tacos. This recipe is perfect for a quick and easy dinner at home or for your next gathering. We’ve made it a few times for our team meetings, and usually we don’t have any left over.
The Beer
We recommend using Garage Brewing Company Hatch Chile IPA. This unique American IPA has an aged Hatch chile flavor with medium-low heat and is so delicious, you’ll have to buy another (or two). Not only is it a delicious beer to use in this recipe, it’s also a beer you can handle drinking while you are cooking. You can find this beer in both can and bottles.

- 6 boneless skinless chicken breast
- 2 cups salsa verde
- 1 bottle beer We used Garage Brewing Company Hatch Chile IPA
- 2 teaspoons Ground Cumin
- salt & pepper to taste
- 1 cups (210 g) chopped onions
- lime juice to taste

- Add chicken to the bottom of the slow cooker. Next, pour the salsa verde and beer over the chicken. Add the cumin and season with a few generous pinches of salt and a pinch of pepper. Use a pair of tongs or a spoon to turn/mix the chicken mixture so both sides are coated. Cover the mixture and let it cook. This recipe can be cooked for 3-4 hours on high heat if you are in a hurry, or 7-8 hours on low heat if you would like to set it and forget it before heading out for the day.
- The chicken is ready when it is easily shred with a fork. Drain most of the liquid, but not all as you need some to help keep it moist. Next, shred the chicken in the slow cooker, and toss with the remaining juice. Finally, remove the chicken with a slotted spoon and serve warm. The shredded chicken can be stored in the refrigerator in a sealed container for up to 5 days, or in the freezer for up to 3 months.

- (optional: 1 jalapeno, stem removed and diced, leaving the seeds in for extra heat if desired)
