Quench Your Thirst (& Hunger) at Thirsty Monk Denver
Thirsty Monk may be relatively new to Denver, but they’re quickly becoming a local favorite. Nestled in the Denver Uptown’s “Restaurant Row,” their 12 barrel-brewery tasting room offers a cozy and warm environment to spend time with your friends and family. Currently, head brewer Brian Grace is brewing Thirsty Monk’s core, seasonal, specialty, and side-project beers at their Denver location. He is also spearheading the creation of open fermentation, barrel aging and sour programs, which are based in North Carolina. If you haven’t checked out their Denver location yet, you most definitely have to! We had a great time visiting with our friends at RadCraft and Jeff, Thirsty Monk Denver’s general manager.
The Beer
Needless to say, all the beers I tried were nothing short of delicious. We had the chance to enjoy their U.S. Beer Open award-winning Abby Blonde, their collaboration Grisette with Baere Brewing: Baere Monk, their Cherry Gose, Easy Gose, Wiser Monk, and, although not a beer, their Hop Tonic. Of the ones I tasted, it’s hard to pick a favorite. I will say this: there’s a reason why Abby Blonde took home an award at the U.S. Beer Open!
The Food
Not only does Thirsty Monk offer delicious food flights tailored to what you’re drinking, they also have pints of bacon available to snack on while you’re enjoying your time at their tasting room. What’s even more special about their food flights- the crackers/bread are made in-house at their North Carolina location, and they source the protein and meats from vendors in their neighborhood. The collaborative goal of Thirsty Monk brings joy to guests’ taste buds as the beer and food elevate one another. While I visited, I had the chance to taste some cherry almond ice cream made in partnership with another local vendor. The ice cream was infused with their own Cherry Gose. The tartness of the beer compliments the sweetness of the ice cream, balancing out the palate.
There’s no doubt that I’ll be back to enjoy more of their food flights and delicious beer in the near future!
